The
"Amalfi Sfusato" lemon has
played an important role in the preparation of sweets and ice creams
for centuries; its flavour is the master's touch in many Mediterranean
dishes.
Its juice is used in the preparation of simple, refreshing drinks,
such as lemonade. In cooking, the "sfusato" lemon, which
on other occasions is often used for therapeutic purposes, is an indispensable
ingredient in the preparation of sophisticated first courses and cakes.
Lemon liqueur is an excellent natural digestive, often served cold
at the end of a meal.
The juice, the pulp, the seeds, the skin and even the leaves of the
"Amalfi Sfusato" may be used. Its therapeutic properties
are well-known: it fights infection, stimulates the immune system,
relieves stress, is an aid to smokers, stimulates growth and retards
senescence, and enhances athletic performance.

As far as fertilising is concerned, only organic fertilisers are
used: cow-, sheep- and goat manure, once a year. Mineral oils and
copper sulphate are used as fungicides and C.AT.A. has recently been
experimenting with biological treatments, using insects to combat
other, harmful insects.
As of this year, our lemons have prestigious European Community G.I.P.
(Geographic Indication Protected) certification under the name "Amalfi
Coast Lemon".
